Pancake Eclair Stack
Eclairs are made by spreading homemade vanilla cream between each layer of your stack of pancakes. Yummy! The ingredients make a lot of vanilla cream so you may want to cut those ingredients in half if you will make only a few pancakes.
Ingredients
¾ cup milk
12 oz thawed Cool Whip
Drop of vanilla extract
Powdered sugar
Whipped topping
Chocolate syrup (you may substitute with chocolate icing as pictured but the syrup is so much better)
Mrs. Butterworth’s Pancake Mix
Vanilla Cream Directions
1. In large mixing bowl, mix dry pudding, cream cheese and vanilla together (this is about the consistency of cookie batter so be sure to keep your beaters cleaned off….looks like scrambled eggs after mixing)

2. Beat in milk (looks like thick pudding after mixing)
3. Stir in Cool Whip then beat on low (with clean beaters) for about 2 minutes (this will be slightly thinner than icing when finished)

After hand stirring
After beating with the mixer
2. Spread vanilla cream between each pancake layers (add as many layers as YOU desire)
3. Sprinkle with powdered sugar and drizzle chocolate syrup on top

4. Squirt whipped topping on top (I forgot to get a picture of that)
5. Serve
*Store any leftover vanilla cream in refrigerator if you plan to make more Pancake Éclairs or a cake in the next few days. Keep in mind that most of your ingredients do have expiration dates so this won’t store very long.

September Quick Tips in Creative Times Magazine
Wow! It has been a while since I've had time to post to this blog. So sorry about that. Life is extremely busy with summer activities (mowing), homeschooling (well we did get a two month break from lessons but I had to prepare us for high school classes so I never noticed the two month break), housework, writing, new gmail group for us ladies (you should join us http://groups.google.com/group/e-craft-classes?pli=1), still promoting http://www.ecraftclasses.com/, sewing when there's time to do so, and no vacation. I guess now is as good a time as any to update you on my Quick Tips section in Creative Times Magazine.
I have had a horrible time trying to get my Quick Tips ready for the September issue of Creative Times Magazine. Too much other stuff on my mind I guess. But I finally came up with the eight that I needed and eight that I'm really proud of. Four are sewing tips and the other four are health and beauty tips that should be helpful for the upcoming fall and winter months. Hotdog Sandwiches
Ingredients:
1 ½ to 2 hotdog wieners per sandwich
2 slices of toast
Shredded cheddar cheese
Chili
Onion – diced
Condiments
Directions:
Cut hotdogs in halfFry hotdogs
Place 3 or 4 halves on one slice of toasted bread
Top with second slice of toasted bread
